Pasta Salad

A light and tangy pasta salad packed with fresh veggies and flavor.

Ingredients

  • 2 cups cooked pasta (penne or rotini)
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber slices
  • 1/4 cup diced bell peppers
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Pinch of salt and pepper

Instructions

In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, and bell peppers.

Drizzle with olive oil and lemon juice, then toss to coat.

Season with salt and pepper to taste.

Chill in the refrigerator for 30 minutes before serving.
